Churros using Choux dough method
 
Churros dough
125g Water
125g Milk
a pinch of salt
100g unsalted butter
150g Flour
3 large eggs
1/2 vanilla pod (beans scrapped out)
1/2 orange zests
 
Coating
Fine sugar &amp; orange zests
or
Fine sugar &amp; cinnamon powder
 
Bring water, milk, vanilla, zests, salt and butter to a boil.
Out of heat, add in the flour and mix with a wooden spoon.
Stir until the dough does not stick to the saucepan.
Place the dough in a mixer, beat on low speed until it cools down slightly.
Add in the eggs one by one, beating well after each addition.
Pipe the choux pastry with a star tip nozzle into tiny long strips on baking sheets.
Set pastry in the freezer (will take at least 30mins).
 
Ready a metal container or square cake pan with coating sugar mixture.
Heat oil and deep fry frozen choux pastry until golden brown.
Transfer immediately and roll into flavoured sugar before serving.
